Spring Mackerel salad

Every year when spring rolls around again I get excited for all the fresh & light recipes. I also get motivated to balance my lifestyle again & focus more on health. I’ve done a ton of research on nutrition recently & found that Mackerel has a very significant amount of Omega 3s - even more than salmon & tuna. I am a huge chicken/tuna salad with crackers fan so I had to try a Mackerel salad & it turned out delicious! This will be in my lunch rotation on repeat this spring & summer. I hope you love it too!

INGREDIENTS:

  • 1 can mackerel (drained)

  • 1/4 cup Caesar dressing ( I use Primal Kitchen)

  • 1 tsp Dijon mustard

  • 1/2 lemon juice + zest

  • 1 stick of celery chopped

  • 2 tbsp. cucumber chopped

  • 2 tbsp. red onion chopped

  • 1 tbsp. fresh parsley chopped

  • salt & pepper

INSTRUCTIONS

Prep & chop all ingredients. In a medium bowl shred drained Mackerel & combine all ingredients. Gently stir until well combined. Top with salt & pepper according to your taste!

Ready to serve! Great served anyway you normally would chicken salad; in a sandwich/wrap, on a salad or my personal fav with nut thins crackers!
