Banana Carrot Apple Bread (no added sugar)

Ingredients

  • 2 medium ripe bananas (about 200 g)

  • 1 cup (145 g) shredded carrot

  • ½ cup (120 g) unsweetened applesauce

  • 2 large eggs

  • ½ cup (100 g) light olive oil

  • 1 ¾ cups (220 g) oat flour (or all-purpose flour if you prefer)

  • 1 tsp baking soda

  • 1 ½ tsp ground cinnamon

  • ¼ tsp ground ginger

  • ½ tsp fine sea salt

  • ¼ cup (60 g) plain Greek yogurt (or sour cream)

Method (with KitchenAid)

  1. Prep: Preheat oven to 350°F (175°C). Grease & line a standard loaf pan with parchment.

  2. Bananas: In the mixer bowl, add peeled bananas. Using the paddle attachment, beat on medium speed until mashed and smooth (about 1–2 minutes).

  3. Wet Base: Add applesauce, eggs, and olive oil. Beat on medium-low until combined (about 30 seconds).

  4. Carrots: Mix in the shredded carrot on low speed just until incorporated.

  5. Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, and salt.

  6. Combine: With mixer on low speed, gradually add dry mixture to wet mixture. Mix until just incorporated (don’t overmix).

  7. Yogurt: Add Greek yogurt and mix on low just until smooth. Scrape down the bowl if needed.

  8. Bake: Pour batter into prepared loaf pan, smooth the top, and bake for 50–60 minutes (check at 50).

  9. Cool: Let rest 15 minutes in the pan, then lift out with parchment and finish cooling on a rack.
