Banana Carrot Apple Bread (no added sugar)
Ingredients
2 medium ripe bananas (about 200 g)
1 cup (145 g) shredded carrot
½ cup (120 g) unsweetened applesauce
2 large eggs
½ cup (100 g) light olive oil
1 ¾ cups (220 g) oat flour (or all-purpose flour if you prefer)
1 tsp baking soda
1 ½ tsp ground cinnamon
¼ tsp ground ginger
½ tsp fine sea salt
¼ cup (60 g) plain Greek yogurt (or sour cream)
Method (with KitchenAid)
Prep: Preheat oven to 350°F (175°C). Grease & line a standard loaf pan with parchment.
Bananas: In the mixer bowl, add peeled bananas. Using the paddle attachment, beat on medium speed until mashed and smooth (about 1–2 minutes).
Wet Base: Add applesauce, eggs, and olive oil. Beat on medium-low until combined (about 30 seconds).
Carrots: Mix in the shredded carrot on low speed just until incorporated.
Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, ginger, and salt.
Combine: With mixer on low speed, gradually add dry mixture to wet mixture. Mix until just incorporated (don’t overmix).
Yogurt: Add Greek yogurt and mix on low just until smooth. Scrape down the bowl if needed.
Bake: Pour batter into prepared loaf pan, smooth the top, and bake for 50–60 minutes (check at 50).
Cool: Let rest 15 minutes in the pan, then lift out with parchment and finish cooling on a rack.
